South Indian Style Spicy Fish Curry !!!

Recipe Cuisine: South Indian
Ingredients:  
For Marinating Fish ;  
Cat fish - 6 pieces(skin removed)
Turmeric powder - a generous pinch
Salt as per required
 
For Dry Roast & Grind into paste ;

Dry Coconut - 2 tbsp
Fenugreek seeds – 1 tsp
Groundnuts – 1tbsp  
Sesame seeds – 1 ½ tbsp  
For Grinding ;

Tomato (large) – 1 nos  
Garlic – 6 nos  
Tempering:

Oil - 2 tbsp
Mustard seeds – ½ tsp  
Cumin seeds / jeera – 1 tsp  
Curry leaves – 3 – 4 leaves  
Onion – 1 (chopped finely)  
Turmeric powder – 1 tsp  
Red chili powder – 2 tsp  
Coriander powder – 2 tsp  
Green chilies – 6 nos (small)  
Garlic – 6-7 nos (chopped)  
Tamarind – lemon size (soaked in water & extracted) Garnishing: coriander leaves - 1/4 cup (chopped)
Method:
  • Dry roast the fenugreek seeds,dry coconut,sesame seeds, groundnuts, till the raw flavor goes off and grind it into paste by adding little amount of water and keep it aside.
  • Ground the ingredients onion, tomato, garlic and keep aside.
  • Keep the pan on low flame, add 2 tablespoon of oil and start to tempering with mustard, cumin seeds and curry leaves.
  • After that add finely chopped onions, garlic, green chilies & sauté it for 2- 3 minutes.
  • And then add all the spices like turmeric, red chili, coriander powder and sauté until the raw flavor goes off.
  • Now add the grounded onion, tomato & garlic paste, tamarind extract, dry roasted paste and add enough water to boil it for 15 more minutes on high flame till the raw smell goes off.
  • After that add washed & marinated fish , cover with lid and cook it for 10 more minutes and switched off the flame and garnish with chopped coriander, mint and curry leaves.
  • Serve it hot and enjoy!!!

Hints: To get rid of fishy smell wash the fish in the fresh cold water and add some turmeric powder and keep it in fridge for 5 minutes, before cooking by using tissue paper remove the moisture from the fish, and add little oil to the pan to fry the fish for a minute and remove the skin (depends on the type of the fish).

Crispy Baked Chicken Wings With Orange Honey Sauce !!!

Chicken wings is one of the most popular appetizer around the world. And here, I have prepared with my own twist. My hubby won't like to eat deep fried food, he is so conscious about his health (but, am not.. Usshh). So I decided to bake my Chicken Wings with some of the Asian spices, available in my pantry. I am from the Southern part of India, I love spicy foods.. So here, I used hot sauce appropriately spicy for my palate, this could be reduced according to your taste. Orange is one of my favourite citrus fruit. This citrus fruit goes well with both sweet & savory ... I personally felt that, it brings more flavour to my recipe !!!

Ingredients: Marination: Chicken Wings (cut the joints) – 250gms (wings tips & skin removed) Fresh ginger (minced) – 2 tsp Fresh Garlic (minced) – 2 tsp Soy Sauce (low sodium) – 1 tbsp Chili sauce (Frank's) – 4 tsp Olive Oil – 2 tsp Pepper powder – 1 tsp Lemon juice – 1 tbsp Salt – 1 tsp Orange Honey Sauce: Orange juice – ½ cup Orange zest – 1 tbsp Honey – 1 tbsp Home made Chicken Broth – ¼ cup Unsalted butter – 1 tbsp Sour Cream / Yogurt dipping: Sour Cream / Yogurt – ½ cup Cilantro – handful Cumin powder – a pinch (optional) Garnish: Sesame Seeds (roasted) – 1 tsp Spring onions / Chives – finely chopped
Method:
  • Preheat the oven to 425 degrees F, place the cooling rack over the top of baking tray which should be lined with aluminum foil / parchment paper.
  • In a zip-lock bag / bowl, marinate the chicken wings with above ingredients. Press the zip line on the bag and shake it nicely to coat well. Marinate atleast for four hours / overnight.
  • Now line the marinated wings in the prepared rack evenly and bake until browned on both sides, about 30 minutes (each side on 15 minutes).
  • While the wings are baking, in a small pan heat the butter, pour the marinated sauce, chicken broth, orange juice & honey, bring to boil on low flame, stirring occasionally, until the sauce / syrup get thicken.
  • Remove the wings from the oven and toasted it with the sauce.
  • Garnish with sesame seeds & chives / spring onions.
  • For dipping, combine & beat all the ingredients in food processor.
  • Serve hot & enjoy it !!

Grilled Chikken Tikka !!!!

Wow !!! Chicken Tikka, quintessential food in India and UK..
Tikka itself refers the small bites, the boneless chicken blend in all spices. The combination of all spices and the marinating time gives prefect juicy and tenderness to the chicken.
In India, whenever I come across the non-vegetarians restaurants, I have seen the crispy, golden & juicy chicken tikka grilled over red-hot coals, which makes me flattered. Somehow, I couldn't had the chance to taste it before, so I planned by last Sunday to try out this recipe.

I used onion, green bell pepper and cherry tomatoes, which really makes more flavourful Tikka.
If you don't have some spices which is listed below; don't hesitate to play with your available spices & it's really fun to make. So here is the chicken tikka recipe, easy to prepare in your home itself.
Ingredients:
Chicken breast (boneless)- 300gms (cut it into cubes) Yogurt – 2 tbsp Garam masala – 2 tsp Cinnamon powder - 1/2 tsp
Nutmeg powder - 1/2 tsp
Javantiri powder - 1/2 tsp
Red chili powder – 1 tsp Coriander powder - 1 tsp Turmeric powder - 1/2 tsp Chat masala – 1 tsp Pepper powder – 1 tsp Ginger garlic paste – 1 tbsp Olive oil – 2 tsp Lemon juice – 1 tbsp Salt to taste
Vegetables (cut it into cubes) : Green bell pepper / Capsicum – 1 Red onion – 1 Cherry Tomatoes (whole)– 5 -6 nos (could use normal tomato also)

Method:
  • First cut the chicken into small cubes and remove the moisture by using paper towel.
  • In separate bowl, add yogurt, lemon juice, oil, all spices given above the list and mixed it well.
  • Now add the chicken to the mixture, cover the bowl with plastic wrap & marinate for overnight / atleast 60 minutes in the refrigerator.
  • After that, thread the chicken & fresh vegetables on to the the skewers and make it ready for grill.
  • Preheat the grill / pan for 5 minutes, spray oil on the top and grill the skewers on both sides over medium high flame until it gets tender.
  • Serve it hot, remove the skewers and garnish with thin onion rings & lemon.

Easy Chocolate Soufflé Recipe / Valentin's Day Special Chocolate Souffle cake !!!

Chocolate is fantasy for everyone !!! The word itself gives more delightful & Romance ….
Chocolate always makes a wonderful recipes for desserts. So here its spongy chocolate souffle cake for your special one's …. Its melts on your mouth !!! Lets see it...

Preparation Time: 30 minutes

Baking Time: 15 – 20 minutes


















Ingredients:
Mild sweet chocolate / chips – 2 tbsp (60gms) Butter – 1 tbsp All purpose flour – 1 tbsp Eggs – 2 (separated white & yolk) Hot milk – 1/3 cups (80 ml) Granulated white sugar – 2 tbsp (plus extra sugar for ramekins) Vanilla extract – ½ tsp
Method:
  • Brush or grease the ramekins with soft butter / vegetable oil, then coat with sugar and kept in freezer for atleast 30 minutes.
  • Now set the oven rack in lower third of the oven and preheat to 400 degrees F.
  • Add butter into a small pan, melt butter and add flour and cook for 1 min on low flame.
  • After that add the hot milk on over medium heat, stir constantly with spatula without any lumps.
  • Put off the flame, add chocolate and stir until melted and set aside.
  • Separate the egg yolks and add to the chocolate mixture, one at a time and add the vanilla extract.
  • Now beat the separated egg white with hand mixer, by slowly adding the sugar until stiff peak or meringue stage.
  • Take 2 tbsp of meringue and add into the chocolate mixture and stir it.
  • Now add the chocolate mixture to the remaining meringue and fold with the spatula slowly.
  • Pour the batter in to the ramekins and clean the ramekins with your thumb.
  • Now bake at 400 degrees F. for about 15 to 20 minutes, or until puffed and crusted on top.
  • Garnish with Confectionery / powdered sugar & Chocolate ice cream.
  • Serve it hot and enjoy it !!!
